Pancakes

Pancakes are basically a flat type of bread which is prepared in a frying pan or over a grill. Though most of the pancakes are breads which are prepared in a short time but as there are differences in the recipe across the world, some make the pancake adding some yeast as leavening agent and also after fermentation. The basic similarity of all the recipes is that Pancakes are made from a sweet batter.
It is not clearly known since when people started eating pancakes. But it is sure that the ancient men who were preparing flat breads are almost certainly were pancakes. That time it was prepared by crushing aggregated pulses and nuts. Water or milk from the household animals was added to make the batter. This was then given shape as they liked and put over a hot stone over the flame.
American and Canadian pancakes are made from flour, eggs, butter and baking powder. Sometimes sugar is also added to make it more sweet. It is then kept over a hot frying pan making the layer of 1 cm. thick. It is usually taken with some pieces of bananas.
In England, the basic ingredients are the same. Here the batter is placed on a side of the pan. It is then tilted to spread over the pan. The average diameter is 7 cm. as it is fried, there is little bubble formation. When the pancake is baked instead of frying, the leavening agent causes bubble formation.
In Asia, Dosa can be treated as the Indian version of pancake. It is prepared from finely grinded rice. The batter is prepared by adding some water and after fermentation. It is then fried making a thin layer keeping some filling (mashed potato, peas, and some seasonal vegetables with some spices). Lastly it is served with “Sambar” and “Coconut chutney”.
